As part of my FebFast I've been looking for good value, tasty, healthy meals. In doing so I've definitely seen a drop in the amount of money spent on groceries! I was wondering if anyone had some favourites they'd like to share? I'll start the ball rolling with Banana icecream.
Get 4 bananas, the riper the better, peel and cut into cubes. Drop into a ziplock bag (or container) and put in the freezer for at least 4 or 5 hours... ideally overnight. When you want icecream, throw the banana straight into a mixer/blender along with a dash of milk and/or yoghurt. For those who aren't big fans of bananas, the yoghurt does make the taste milder. Blitz it until it gets creamy. Initially it will look grainy - just keep going! Can add some walnuts or pecans and maple syrup at the end if you like. Goes well with pancakes. Best eaten immediately, although you can put it back in the freezer... but after a few hours it will start to become more like a gelati.
